How about that snowstorm?! Ha. If you’re not local to Eastern Iowa, we were supposed to get 6-8″ of snow last night and only ended up getting maaaybe 3 total? That’s being generous. Anywayyyy, I’m excited about the weekend. No real plans thus far, but hoping to get some stuff done around the house. Ever since our fireplace mantle remodel project, my husband and I have been thinking of other small projects to do around the house. I think our master bathroom is next! Nothing major – new paint, new light fixtures, painting our vanity, etc.

simple gratitudes

It was yet another day in the Starbucks line when I decided to grab a latte before heading to Costco with the kids. I ordered and made my way around the drive through… got to the window and handed the woman working my gold card. “The person in front of you paid for your coffee, you don’t owe anything,” she stated. 

…Oh! Now, buying someone else’s coffee isn’t that big of a deal financially, but in terms of doing something nice for a stranger, it’s worth a lot! I think these types of happenings in life are what we need to be thankful for the little things.
Sometimes it’s hard to be thankful for everything we have in life. The baby won’t sleep. My toddler won’t stop throwing tantrums. I’m tired. This weather is the worst. But, really… these things are nothing compared to what others are dealing with.
It took me a second to process, but I decided that I would keep the ‘pay it forward’ going and pay for the person’s coffee in front of me. Hopefully they were just as thankful for the generosity and continued it.
Pay it forward. You’ll make someone’s day, promise.

Last Saturday I was able to attend one of my oldest friend’s, Tara’s baby shower. It was so cute, it was at one of the painting places where they show you how to paint certain painting. Mine did not turn out so great, but it was still a lot of fun! I feel like it’s totally a different experience going to baby showers now that I have children… You’re so excited for them to experience being a parent and everything that comes along with it. I was always annoyed with people’s cliche sayings about parenthood when I was pregnant with Finn, but now I TOTALLY get it. It’s all true. The main thing being is how fast it goes. I still can’t believe Finn is already 2. Bea is 9 months… that’s three months away from one year! … Agh, it’s so sad.

Anyway, I wanted to dress up a little bit, but I also wanted to wear dark colors in case I were to spill a little paint… Luckily, I only got some on my hands! 🙂

He’s here…. and almost 4 months!

Well, almost an entire year has gone by without any posts. While I wanted to blog my pregnancy… it’s too late now! Baby has been born… and is already almost four months!


Jerad and I welcomed Finn Seven Ruth on Thursday, November 7th, 2013. He was 6 lbs, 10.8 oz and 20 1/4 inches long. He has changed our lives in so many ways, it’s hard to even describe. Taking care of him is the most rewarding and challenging job I’ve ever had, but I love it. I think the hardest thing lately has been trying to balance spending time with him, work, household chores and more. The longer I’ve been back at work, the more I want to be a stay at home mom. Unfortunately it’s just not in the cards for our family at the moment. Jerad is working hard to hopefully eventually make it a possibility.

We also recently welcomed our new nephew into the family. My sister-in-law, Haily and her husband Mitch, just had a baby boy on February 17. His name is Luke Cohen and he is super adorable. We got to meet him last Saturday… It was amazing to see the difference in how big and mature Finn has gotten in such a short amount of time. Mr. Finn looks gigantic next to Luke!


Jerad and I are getting excited for our trip to Florida coming up. It will be Finn’s first time in an airplane. I keep researching as much as I can so that we have the smoothest trip possible, but I’m sure there will be some speed bumps. Hopefully we survive! 🙂 We will be there for a full week, which will be awesome, but I’m already dreading having to leave Una in Iowa. She loves going to doggie camp, but I just miss her so much when we’re apart. She will always be my first born!


It’s FL time

Aside from the interesting timing of the pregnancy test taking, it was also an interesting week to take it. J and I had been planning a trip to Florida to visit my mom and stepdad at their Florida house. Within 48 hours of thinking “This is gonna be an awesome time for us to drink and relax!!” it went to, “How the hell am I not going to drink for 5 days without my mom expecting anything?!”

While I never planned on waiting the official “3 months” to tell my mom, I wanted to wait a little bit before telling her the news. We left on March 7th, so that gave me less than 24 hours to come up with random excuses why I wasn’t drinking with everyone else.

The first couple of nights were easy. The first night I just claimed to be tired from the travel (which wasn’t a lie! I swear I’ve been exhausted since I found out!) and the second night I also just played tired and not in the mood to drink.

I swear, my mom knew something was up. She didn’t ask me the big question thankfully, but she did say “You’re not drinking alcohol again???” I knew I had to do something about it without her figuring it out.

The next night we went to a great Greek restaurant with another couple my parents are friends with. I knew this was the night I had to “drink” so my mom wouldn’t suspect anything. Instead of having to order myself a drink my mom and stepdad ordered a bottle of wine. I said that I would “have” a glass of theirs, and that way I wouldn’t have to actually order anything.

My glass was poured, and there it sat. I pretended to take a few sips of it every once in a while, but my mom again mentioned, “you’re barely drinking!” I knew it was time to act… the next time she was facing me, I grabbed my cup, and took a tiny sip. As soon as she turned away, I passed the glass to J and he gulped most of it down for me.

I’m pretty sure that no one was paying attention at the time, luckily. As the drinks kept pouring, no one was noticing my lack of alcohol intake. With only one more night in Florida (a pizza take-out dinner), my secret had stayed safe! It was a miracle.


The moment we found out

It’s always an interesting decision on when you decide to take a pregnancy test. For me, I had already taken a few in the past, so I didn’t think much of it. J had been reminding me for the past couple days that he thought my period was supposed to be the week earlier and that I should take one just to see. I never really keep track of when it’s supposed to come, especially since being off BC, so I just figured it was him being anxious and didn’t think much of it.

I finally remembered to take one the morning of March 6th. I did my business, left the stick on the bathroom counter, and went to the kitchen to finish getting ready for work. Suddenly, I hear from the bathroom, “Ummm… it’s positive…?!” Of course, my initial response was “You’re joking…?!”

I go to the bathroom, and low and behold, the stick has a plus sign. It’s faint, but it’s definitely there. My initial thoughts were excitement, couldn’t believe it was actually happening, and wait… I still have to go to work today!

J and I got to share in the joy for about 10 minutes before I had to leave. It was a surreal drive to work… I either felt like I was drugged or drunk. I couldn’t tell you the speed I was going, whether it was busy or not, whether I had even changed lanes. It was crazy (and probably not too safe!)

Even though my job keeps me busy, the day was filled with a lot of emotions and excitement and overall disbelief. Obviously, I knew it was a possibility for us to have gotten pregnant, but it’s a crazy feeling to know that you’ll officially be a “real” (not doggy!) mom in less than 9 months.

Now that I think about it, taking a pregnancy test 15 minutes before I had to leave for work probably wasn’t the best idea. It was a great feeling though. <3


Allergic reactions, oh my.

Well, I’ve been a little MIA from this blog lately. Aside from being busy with my various jobs, I have been dealing with allergic reactions. The weird thing is, I’ve never really been allergic to anything my whole life. [The only exception – Lactose, but that’s more of an intolerance than an allergy.]

It all started after a night out at a restaurant – Mondo’s. I have visited Mondo’s countless times and never had any type of reaction or sickness from there. That night I decided to try the Portobello Cappellinni… It was delicious, and I felt completely normal after eating it…

Fast forward to about 5 am. I hadn’t been sleeping well, but I woke up with a really strange feeling. I could feel that something was wrong with my lip, so I got up and took a look in the mirror. To my surprise, my lip was swollen about 4 times it’s normal size. My lip has been swollen before, so I wasn’t extremely concerned about it, but I was mainly panicking because J and I had just gotten football tickets to the ‘biggest’ Iowa game of the season, (IA vs IA state), and I wanted to make sure I’d be OK for tailgating and the game. (I am an Iowa football freak, I know)

I woke Jerad up, and we decided it would be best to go to the emergency room to see if they could give me anything to take the swelling down asap… (also, make sure nothing too serious was wrong!)

{Side note, when we got to ER, I found it kind of funny that we were sort of ignored for the first few moments of standing there, then told by the nurse, “I’ll be right back…” without her even knowing what was wrong with me. I could have been dying! Apparently she wasn’t overly concerned….}

Emergency Room

Not a happy camper.

After getting checked out by the nurse and doctor, they decided that I had some sort of allergic reaction, and sent me on my way with some Benedryl and Prednisone. I went back to bed, woke up a few hours later with my lip still swollen but looking a little better, so I decided tailgating was in order.

The swelling eventually went down throughout the day, and the game was a success. (except the part where we lost…. boo Iowa)


Fast forward again, to Sunday. I had taken my leftover Cappellinni home with me on Friday, not knowing that it was going to cause an allergic reaction… Since I couldn’t eat it, J decided he would have the rest. I didn’t think anything of it, and was glad at least one of us would get to enjoy it. What I didn’t realize, was that whatever I was allergic to, was now on his body, and he passed it onto me.

Yes, that’s right, another allergic reaction within 48 hours. Awesome. I woke up on Monday morning with my entire face swollen. I popped in my new cocktail of Benedryl and Prednisone, and went to work…. (I’m such a trooper)

After two reactions and the fact that the Cappellinni had been involved with both, I knew something in it was the culprit. The weird thing is, I got an ingredient list from the restaurant, and everything in the dish I’ve eaten a million times throughout my life. (Things like butter, garlic, portobello mushrooms, veggie stock, etc.)

I’m thinking it’s time to set up an appointment with the allergist and figure out what the dealio is. My husband and I’s theory is that maybe the mushrooms were extra “fungi-y” and that’s what caused the reaction…? I’ve had mushrooms on a pizza since then, and was completely fine.

Bucket List

In all honesty, I’m not a “bucket list” type of gal. If anything, I kind of despise them. But after I saw a tweet saying: “List ten things you want to do before you die,” it inspired me to create my own list.

(in no particular order)

1. Become successful at one of my entrepreneurial ventures. (whether that’s Hip Herbivore, Bea Green Design, or something else)

2. Have a couple (*or maybe a few) kiddos.

3. Travel to India, Japan, and some European countries.

4. Publish my own vegetarian cookbook.

5. Get a tattoo.

6. Visit all the states in the US.

7. Have 500+ Twitter followers.

8. Own a mini horse and a micro pig.

9. Visit the 7 wonders of the world.

10. Learn yoga.

Some of those are a little far-fetched, and some are pretty stereotypical, but hey – they’re true.

It’s almost September…

My seester (standard poodle) & I.

I can’t believe it’s almost September. I swear, for the past couple months, my co-worker and I have been repeating the words: “I can’t believe it’s almost ____ (insert month)!” It’s crazy how time is flying.

Although I’ve been busy, I’ve been trying to make it an effort to “finish” both this blog and my freelance design/photography website (beagreendesign). I know they will never officially finished, but I want a couple websites I can link to that show off both my design and writing skills. I’ve gotten both Facebook and Twitters up, I just need to build a list of followers/fans.

At first I was just going to have hipherbivore be a vegetarian food blog with recipes and photos of what I make, but I realize there’s much more that I’d like to talk about and that i’m interested in. (ie fashion, design, exercise, money management, etc.)

I hope that I find people that are excited to share this journey in blogging with me. For those who don’t know me, here’s a little background info:

I’m a female, vegetarian.

I am in my early 20’s, married, living in Iowa.

During the day I work as a graphic designer/marketing assistant at a small medical company.

 In my free time I enjoy spending time outdoors with my hubby and bebe gurl (Una, my black golden doodle puppy), with family and friends, cooking, and freelance designing/photography-ing.
